A family and friends project
The Pirouette adventure started in 2012, initiated by Laurent Fréchet, owner of several restaurants, Jean-Marie Fréchet, wine expert, and Thomas Chaput, restaurant Director who all decided to share their skills. François-Xavier Ferrol, young chef with an experience of prestigious restaurants joined the team.
Pirouette can be defined as a « gastronomic bistro ». On the bistro side for its prices and friendliness, while clearly gastronomic for its top level cookery.
The restaurant strongly promotes clients’ freedom (choice, choice, choice) :
• No imposed menu but a free-choice selection of 5 starters, 5 main courses and 5 desserts changing every month.
• Several formulas : either a lunch menu including a starter and a main course at 20 €, or a starter-main course-dessert menu from the carte at 45 € or a 6 steps gourmet’s menu (menu dégustation) at 65 €.
• A comprehensive wine list offering 130 wines at a wide range of prices and to everyone’s taste.
Chef François-Xavier Ferrol passed through the kitchens of Eric Frechon where he acquired a sober and efficient cooking style. Every single element in the plate has its importance, even the smallest.
The different flavors combine with each other rather than one overwhelming the other. François-Xavier’s knowledge of cooking and seasoning skills is especially praised both by our clients and his peers.

We have designed the wine list to fit Chef François-Xavier’s innovative, accessible and contemporary culinary style. For each wine region a choice is offered between star wineries and future talents. A wide range of more than 20 wines are served by the glass to adapt to menu changes. Some of our wines can be found (almost) nowhere else like this Rasteau Vin Doux Naturel, a perfect match with chocolate desserts.
